Instructions

In large bowl combine dry ingredients. Mix with fork and make well in center.In separate bowl, beat eggs, gradually beat in: oil, water, pumpkin. Pour into well in dry ingredients. Mix thoroughly but don't beat. Add coconut (nuts and raisins can be substituted). Pour half of batter in greased and floured loaf pan and pour other half into separate greased, floured loaf pan.

Bake at 350F for 60-75 minutes. Test with toothpick from 60 minutes on. Turn on rack and cool
