Ingredients:
- pastry for two-crust pie (in theory, 10-inch; in practice, most
pie plates are 24 cm)
- 1c sugar
- 1/3c flour
- 1/4 tsp salt
- 1 tsp ground nutmeg
- 1-1/2 tsp ground cinnamon
- 3/4 tsp ground cloves
- 8 cups apples (peeled, sectioned)
- 3 tbsp butter (margarine works fine)
Directions
Roll out both crusts first.
Mix sugar, flour, spices. Mix in apples.
Cut up butter and dot over filling before covering with top crust.
Slit and seal crust. Bake at 425 degrees for 30 minutes, protecting
the edges of the crust (with tin foil). Increase oven to 450, remove
tin foil, bake approx. 15 more minutes.
Notes:
Using more than one kind of apples usually helps. I used McIntosh
and, um, something else in this pie, and left some of them unpeeled.
